Baked Sausage Patties

On weeks that I really feel like I have my life together (ha!), it's usually due to a combination of A) early morning wake-ups and workouts and B) meal-prepping some quick and easy breakfast items. Having these baked sausage patties ready to go in the fridge makes our mornings so much easier — fewer dirty pans in the sink + easy and filling protein to have with some eggs = happy mom!

I started making these when I realized how often I was skipping breakfast (no bueno, considering I workout at 5:30 every morning) or grabbing something that didn’t really keep me full (looking at you, half-eaten kids' toast). Now, even on chaotic mornings I know I can microwave a couple of these sausage patties and actually sit down for a hot breakfast. It’s such a small thing, but it makes a big difference in how the rest of the day goes — parents of little kids, I know you get it!

For my perfect quick and easy breakfast, I like to pair these baked sausage patties with these cottage cheese egg bites for the ultimate 2 minute weekday meal. Add a handful of berries or a piece of toast, and you've got yourself a satisfying breakfast that keeps you full until lunch.

These are baked in the oven rather than fried in a pan on the stove because it's far easier and makes much less of a mess — splattering oil is one of my kitchen arch nemeses, honestly. I line a sheet pan with parchment, scoop the patties on, and let the oven do the work while I clean up or prep something else.

Substitutions

I like to do ½ pork sausage and ½ turkey sausage to cut down on the fat a little bit, but you could do the full amount with pork sausage if you'd prefer! Or swap in chicken sausage for turkey. I haven’t made these with 100% turkey sausage yet, but that’s on my list to try soon.

Storage

I keep enough for four days in the fridge and flash freeze the rest for future breakfasts. Just reheat in the microwave for 45–60 seconds and you're good to go — easy breakfast meal prep at its best!

Baked Sausage Patties

Ingredients
  

  • 1 lb. pork sausage
  • 1 lb. turkey sausage
  • 1 egg
  • 2 tsp salt
  • ½ tsp black pepper
  • ½ teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 2 Tbsp. maple syrup
  • 3 oz. cheddar cheese shredded
  • 2 teaspoon olive oil

Instructions
 

  • Pre-heat oven to 350º F and line two baking sheets with parchment paper.
  • In a medium bowl, combine pork sausage, turkey sausage, one egg, 2 teaspoon salt, ½ teaspoon black pepper, ½ teaspoon nutmeg, 1 teaspoon cinnamon, 2 Tbsp. maple syrup, 3 oz. shredded cheddar cheese, and 2 teaspoon olive oil. Mix thoroughly with your hands (I like to wear gloves for this part but that's personal preference!).
  • I like to use a cookie scoop for this step — I do heaping tablespoon size balls then flatten into patties, and bake for 15-20 minutes. I use a meat thermometer to ensure that they're cooked to at least 160º for food safety!
  • I keep a few in the fridge but then flash freeze most of them for easy to grab breakfast for us and the kids. Re-heat for 45 seconds in the microwave and voila!

Notes

  • Not a cheese fan? Feel free to omit! I add it for my cheese-loving family. 
  • These work well with homemade breakfast sandwiches — toast up an english muffin, fry up an egg, top with cheese and voila! If you're feeling extra ambitious you could meal prep a bunch of full sandwiches, then wrap in foil and freeze. I used to do this when we were childfree and living in Brooklyn, but haven't gotten back to that just quite. Maybe this is the year!
  • You could use 2 tablespoon of brown sugar in place of the maple syrup, if you don't have any.
