Pre-heat oven to 350º F and line two baking sheets with parchment paper.
In a medium bowl, combine pork sausage, turkey sausage, one egg, 2 teaspoon salt, ½ teaspoon black pepper, ½ teaspoon nutmeg, 1 teaspoon cinnamon, 2 Tbsp. maple syrup, 3 oz. shredded cheddar cheese, and 2 teaspoon olive oil. Mix thoroughly with your hands (I like to wear gloves for this part but that's personal preference!).
I like to use a cookie scoop for this step — I do heaping tablespoon size balls then flatten into patties, and bake for 15-20 minutes. I use a meat thermometer to ensure that they're cooked to at least 160º for food safety!
I keep a few in the fridge but then flash freeze most of them for easy to grab breakfast for us and the kids. Re-heat for 45 seconds in the microwave and voila!
Notes
Not a cheese fan? Feel free to omit! I add it for my cheese-loving family.
These work well with homemade breakfast sandwiches — toast up an english muffin, fry up an egg, top with cheese and voila! If you're feeling extra ambitious you could meal prep a bunch of full sandwiches, then wrap in foil and freeze. I used to do this when we were childfree and living in Brooklyn, but haven't gotten back to that just quite. Maybe this is the year!
You could use 2 tablespoon of brown sugar in place of the maple syrup, if you don't have any.
