...then welcome! I've been all of those at one point or another, and while I do appreciate the occasional leisurely Sunday spent carefully crafting a delicious dinner, I'm also a realist. We have a toddler who I am at home with during the day, and getting dinner on the table every night can be a battle that, at the end of the day, I simply have no energy for.

Enter: one pot meals! They're my absolute favorite in the dead of winter — they're warm, cozy, and require minimal clean-up, which means I can snuggle up under a blanket on the couch immediately after (a delicious!) dinner.

I'm an ardent proponent of keeping your grocery budget as low as you can while buying quality food, and also of meal planning. Below, I'm going to share some of my favorite one pot dinner ideas, most of which I've made, but also I'm digging deep into my recipe index that I refer to while doing said meal planning.

I'm sharing a range of vegetarian, meat-based, and vegan dishes, because we eat a range of diets in my family. We enjoy vegan meals, but my daughter and I eat meat while my husband is vegetarian.
