Loaded with fresh tomatoes but don't want to bother peeling them? Join the club. Thankfully, this no cook pizza sauce enables you to leave the nutrient-rich skins alone and enjoy the fruits (get it?) of your garden labor.
2lbsfresh plum tomatoes~900g (I have piennolo del vesuvio in the garden)
1tablespoonextra virgin olive oil
¼cuptomato paste
2pitted datesyou could also use ½ teaspoon sugar but I love the flavor from the dates
2teaspoondried oregano
½teaspoongarlic powder
juice from ½ lemon
salt to taste -- start with ¼ teaspoon and keep adding until it taste right to you. I ended up doing ¾ tsp
black pepper to taste
Instructions
Combine all ingredients in high-speed blender and mix until thoroughly combined. If seeds are extraordinarily offensive to you, then by all means strain the sauce to remove them, but it’s not required! Like I said: lazy.
Use immediately and freeze leftovers in quart-sized freezer bags (or whatever you do for freezer storage!) for future use.
