Pizza Sauce With Fresh Tomatoes

Loaded with fresh tomatoes but don't want to bother peeling them? Join the club. Thankfully, this no cook pizza sauce enables you to leave the nutrient-rich skins alone and enjoy the fruits (get it?) of your garden labor.

Ingredients
  

  • 2 lbs fresh plum tomatoes ~900g (I have piennolo del vesuvio in the garden)
  • 1 Tbsp extra virgin olive oil
  • ¼ cup tomato paste
  • 2 pitted dates you could also use ½ tsp sugar but I love the flavor from the dates
  • 2 tsp dried oregano
  • 1/2 tsp garlic powder
  • juice from ½ lemon
  • salt to taste -- start with ¼ tsp and keep adding until it taste right to you. I ended up doing ¾ tsp
  • black pepper to taste

Instructions
 

  • Combine all ingredients in high-speed blender and mix until thoroughly combined. If seeds are extraordinarily offensive to you, then by all means strain the sauce to remove them, but it’s not required! Like I said: lazy.
  • Use immediately and freeze leftovers in quart-sized freezer bags (or whatever you do for freezer storage!) for future use.
